Directions
You Will Need:
1 can unsweetened coconut milk
1/2 tsp. cornstarch
1 cup frozen green beans
1/2 cup frozen pea and carrot blend
1 can garbanzo beans, drained
To Make:
- In a medium saucepan, whisk together coconut milk, packet contents, and cornstarch.
- Heat to a simmer on medium-low heat.
- Add vegetables and chickpeas.
- Return to simmer for about 5 minutes, until vegetables are tender.
- Serve over rice.
Suggested Uses
Simmer seasoning mix with coconut milk for a creamy sauce. Add vegetables or legumes and serve with rice.
